If you know me at all then you know that I would pick an apple treat of any kind over chocolate ANY day! i LOVE apples! I came across this yummy & simple apple mini-muffin recipe.
It's really easy! All you need is...
2 c all-purpose flour
1/2 c sugar
1 tbsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1 egg
3/4 c apple juice
1 apple, peeled & finely chopped
Preheat oven to 400 degrees. Lightly spray mini-muffin pan. In a large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg & salt. In a small bowl, whisk egg & juice. Add to dry ingerdients, stir until just moistened. (Batter will be lumpy.) Stir in apple. Spoon batter into muffin cups, filling each 3/4 full. Bake 12-15 minutes. The recipe says it makes 24, but I made 32.
The best part of my muffin baking & eating was who I got to share them with. I am blessed to be sharing the next few months in the Word, studying the book of Esther {which just happens to be my most favorite Bible story} with some of my dearest friends. I am so looking forward to see what God has in store for all of us!
